A 100-gram serving of sweet potatoes provides 7 percent of our daily recommended allowance of complex carbohydrates, or about 21 grams. The skin of sweet potatoes is particularly healthy, as it contains several vitamins and minerals, including potassium and phosphorus.

A single 100-gram serving of boiled sweet potato contains 41 calories. It contains 0.34 grams of fat and 0 milligrams of cholesterol, which is about 2% of our daily recommended intake. This vegetable also contains many important vitamins and minerals that may be of interest to those trying to meet dietary requirements.
